Chicken Spiedini

Ingredients

  • 4-6 CHICKEN BREASTS

  • 1 C. ITALIAN STYLE BREADCRUMBS

  • ½ C. GRATED PARMESAN CHEESE

  • ½ - 1 C. OLIVE OIL

  • 2 LARGE LEMONS

  • 1 T. MINCED FRESH GARLIC

  • SKEWERS

Instructions

  1. You start by tenderizing the chicken. You can hammer it, or my preference is to use a Jaquard and tenderize well (be careful not to go overboard or you will have ground chicken!).

  2. Mix about 2 cups of breadcrumbs to 1 cup of parmesan cheese. You will repeat this as needed. So that is a 2:1 ratio. 

  3. Set aside. 

  4. Pour 1 cup of olive oil in a bowl, add the zest from the lemons (more is better), squeeze lemon juice in oil to your desired amount (about 1-2 T is usually good).

  5. Add a T. of crushed or minced garlic and whisk oil, lemon zest, lemon juice and garlic together.  

  6. Dip your chicken breasts into olive oil mixture, then dip into breadcrumb mixture and cover well. 

  7. Set aside until you have done all of your chicken this way. 

  8. Now, take one chicken breast and roll (long ways) tightly, then proceed to cut ½ -1” thick pieces and place those pieces on a skewer (oil the skewer with olive oil before this). 

  9. Repeat until all chicken is cut this way. 

  10. Use any leftover breadcrumb mixture to cover naked spots if desired. 

  11. You can now cook the chicken skewers on a grill or in an oven on broil until golden brown on all sides. 

  12. Serve with your favorite pasta or side dish and enjoy!
