Cranberry Orange Biscotti

Ingredients

  • 2/3 C. SUGAR

  • ½ C. OLIVE OIL

  • 1 ½ T. ORANGE ZEST

  • 1 ½ T. VANILLA

  • 3 EGGS

  • 2 ½ C. FLOUR

  • 1 C. DRIED CRANBERRIES

  • 1 T. BAKING SODA

  • 1 T. BAKING POWDER

  • ¼ T. SALT

Instructions

  1. In a large bowl or stand mixer, blend sugar, olive oil, orange zest, vanilla and eggs. 

  2. Mix in the flour, baking powder, baking soda and salt

  3. Shape dough into a 10” x 3” rectangle using wax paper. 

  4. Remove wax paper and place on parchment paper lined cookie sheet. 

  5. Bake at 350 degrees for 25-30 minutes, or until a toothpick comes out clean. 

  6. Let cool on cookie sheet 15 minutes. 

  7. Cut ½ inch slices at an angle and place cut side down on cookie sheet. 

  8. Bake for 15 minutes, turning ONCE, they should be a very light golden brown. 

  9. Let cool. 

*Optional - You can melt chocolate and drizzle over biscotti or dip one half of biscotti in chocolate and place on wax paper and refrigerate for a few hours.
