Maugeri Salad

Ingredients

  1. 3 HEADS OF ROMAINE LETTUCE

  2. 1 C. OLIVE OIL + 2 T. (TO SAUTÉ PEPPERS)

  3. ½ C. RED WINE VINEGAR

  4. ¼ C. HONEY

  5. 1-2 CLOVES GARLIC, FINELY CHOPPED

  6. ½ T. SALT

  7. ½ T. PEPPER

  8. 1 RED SWEET PEPPER, FINELY CHOPPED

  9. 16 OZ ARTICHOKE HEARTS WHOLE OR QUARTERED

  10. 1 C. FRESHLY GRATED PARMIGIANO-REGGIANO CHEESE

Instructions

  1. Wash and dry your romaine. 

  2. Use a cutting board and finely chop your garlic and peppers separately.

  3. Set garlic in mixing bowl. 

  4. Sauté the peppers.

  5. Add olive oil, vinegar, honey, salt and pepper to bowl with the garlic.

  6. Mix well, then add the parmigiano and whisk. This is your salad dressing.

  7. Cut artichoke hearts into small pieces. 

  8. Chop romaine into bite size pieces. 

  9. In a large bowl, place romaine, top with artichoke hearts and sauteed peppers, then add olive oil dressing mixture and toss the salad.  Enjoy!
