Nana’s Stuffed Pasta Shells

Ingredients

  • 1 LB ITALIAN SAUSAGE

  • 1 LB JUMBO PASTA SHELLS

  • 1 MEDIUM YELLOW ONION, FINELY CHOPPED

  • 1 CLOVE OF MINCED FRESH GARLIC

  • 8 OZ FRESH MUSHROOMS (SLICED)

  • 1 T. SALT

  • 1 T. PEPPER

  • 1 T. DRIED BASIL

  • 1 10 OZ PKGS FROZEN SPINACH, THAWED & DRAINED

  • 1 10 0Z CAN CREAM OF MUSHROOM SOUP

  • 8 OZ SOUR CREAM

  • ½ C. SHREDDED MOZZARELLA

  • ½ C. FRESHLY SHREDDED PARMESAN

  • 4 OZ HEAVY WHIPPING CREAM

Instructions

  1. Boil pasta 8-9 minutes to make them “al dente” and drain.  

  2. Brown meat in a large skillet. 

  3. Stir in onion, garlic, mushroom, and basil. 

  4. Add salt and pepper to taste.

  5. Drain fat drippings. 

  6. Mix spinach and soup into meat mixture. 

  7. Add sour cream and mix well.

  8. Arrange cooked pasta shells in a baking pan, single layer. 

  9. Stuff meat mixture into shells. 

  10. Sprinkle with cheeses. 

  11. Pour thin layer of cream over top of shells. 

  12. Bake at 350 degrees for 30 minutes.
