Nana’s Sicilian Meatballs

Ingredients

  • 2 LB GROUND CHUCK

  • 2 C. ITALIAN STYLE BREADCRUMBS

  • 1 C. GRATED PARMESAN CHEESE

  • 3 EGGS

  • 2 T. MINCED GARLIC

  • 1 T. GROUND FENNEL

Instructions

  1. Throw all of the ingredients in a bowl (of course crack the eggs and discard the shell) and mix and squish with your clean hands. If too dry, add egg. If too wet, add breadcrumbs and parmesan 2:1 ratio. 

  2. Form meatballs to whatever size you like!  You can cook on the stovetop in a frying pan or on a baking sheet in the oven. 

  3. If you are pairing with a tomato sauce, cook about halfway done and add meatballs to the sauce to finish cooking.  Otherwise, cook completely, or at least “medium well” and serve.
